  • Athenian Style Chicken Kabobs

    Ingredients

    • 1 c. plain low-fat yogurt
    • 2 Tbsp. lemon juice
    • 1 x garlic clove chopped
    • 1 tsp dry oregano
    • 12 ounce boneless skinless chicken breast halves-3 cut in 1" pcs
    • 1 med red bell pepper cut in 1" pcs
    • 1 med zucchini cut in 1/4" slices
    • 1 lrg red onion cut in wedges
    • 10 ounce couscous
    • 1/2 c. feta cheese crumbled
    • 2 Tbsp. minced fresh parsley optional

    Directions

    1. In small bowl, combine yogurt, lemon juice, garlic and oregano. Thread chicken, red pepper, zucchini and red onion alternately onto 4 skewers; baste once with yogurt mix; throw away remaining. Grill or possibly broil kabobs for 5 min. Turn and grill an additional 5 min. Meanwhile, prepare couscous according to package directions. Stir in feta and parsley. Serve kabobs over bed of couscous.
    2. Serves 4. Cooking time 10 min.
