Athenian Style Chicken Kabobs
Ingredients
- 1 c. plain low-fat yogurt
- 2 Tbsp. lemon juice
- 1 x garlic clove chopped
- 1 tsp dry oregano
- 12 ounce boneless skinless chicken breast halves-3 cut in 1" pcs
- 1 med red bell pepper cut in 1" pcs
- 1 med zucchini cut in 1/4" slices
- 1 lrg red onion cut in wedges
- 10 ounce couscous
- 1/2 c. feta cheese crumbled
- 2 Tbsp. minced fresh parsley optional
Directions
- In small bowl, combine yogurt, lemon juice, garlic and oregano. Thread chicken, red pepper, zucchini and red onion alternately onto 4 skewers; baste once with yogurt mix; throw away remaining. Grill or possibly broil kabobs for 5 min. Turn and grill an additional 5 min. Meanwhile, prepare couscous according to package directions. Stir in feta and parsley. Serve kabobs over bed of couscous.
- Serves 4. Cooking time 10 min.
