Asparagus~Lemon Shrimp~Tomato Cold Pasta
I love the ingredients in this easy cold pasta dish for the warm months. Ingredients
- 8 ounces Large Shrimp
- one teaspoon Old Bay Seafood Seasoning
- 6 ounces fresh asparagus
- one lemon (juice only)
- dash of garlic and onion powders
- 1/2 cup grape or cherry tomatoes
- Salt and black pepper, to taste
- 8 ounces Linguine (or spaghetti or any type of pasta you like)
Directions
- Boil your choice of pasta (as per instructions, al dente) rinse and drain
- Boil shrimp with Old Bay 3-4 minutes until pink, drain
- Boil Asparagus spears 3-4 minutes, cool them down cut into pieces
- In a Large Mixing bowl add all cooked ingredients (pasta, shrimp, asparagus) add tomatoes, seasonings, stir gently, cover and refrigerate 30-45 minutes before serving. Add fresh lemon juice, toss, add s & p and devour!
