Asparagus And Tomato Pasta Salad
Ingredients
- 2 c. asparagus, (about 1 lb.), diagnonally sliced
- 1/3 c. orange juice
- 3 Tbsp. white wine vinegar
- 2 Tbsp. water
- 1 Tbsp. extra virgin olive oil
- 2 tsp Dijon mustard
- 1/4 tsp freshly grnd pepper
- 1/8 tsp salt
- 2 c. cooked small seashell macaroni
- 1 1/2 c. cherry tomatoes, quartered
- 1 c. yellow bell pepper, diced
- 1/2 c. kalamata olives, minced
- 1/4 c. green onions, thinly sliced
- 2 Tbsp. capers
Directions
- Steam asparagus covered, 2 min, drain, and set aside.
- Combine orange juice and next 6 ingredients (orange juice through salt) in a large bowl; stir well with a wire whisk. Add in asparagus, pasta, and remaining ingredients; toss well.
