Asparagus And Roasted Red Pepper Salad
Ingredients
- 2 c. steamed sliced fresh asparagus
- 1/2 c. diced roasted red pepper
- 1/2 c. sliced artichoke hearts
- 2 Tbsp. extra virgin olive oil
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. red wine vinegar
- 1 tsp chopped fresh dill
- 1 Tbsp. chopped fresh Italian parsley
Directions
- Combine the asparagus, red pepper, and artichoke hearts in a salad bowl.
- Whisk together the remaining ingredients to make the dressing and pour over the salad. Refrigerateand serve cool.
