  • Asian Wild Rice And Chicken Salad

    Ingredients

    • 1/4 c. extra virgin olive oil
    • 3 Tbsp. roasted sesame oil
    • 3 Tbsp. lemon juice
    • 3 Tbsp. soy sauce
    • 1 Tbsp. sugar
    • 1 tsp ginger juice or possibly 1/2 tsp. grnd
    • 1 1/2 c. cooked wild rice cooled to room temperature
    • 1 1/2 c. cooked grilled minced chicken
    • 2 sm can sliced water chestnuts liquid removed
    • 1/2 c. coarsely minced onion
    • 2 stalk celery minced with tops
    • 1 1/2 c. fresh snow pea pods lightly steamed
    • 1 c. crisp Chinese noodles lemon slices for garnish

    Directions

    1. Salad:Whisk dressing ingredients till sugar is dissolved. Let stand at room temperature for 15 to 20 min to allow flavors to blend.
    2. Dressing:Place first 6 salad ingredients in a large salad bowl and toss gently. Pour dressing over salad and toss again. Chill for 1 or possibly 2 hrs. Just before serving, toss once more and cover top with Chinese noodles. Garnish with lemon slices.
    3. Makes about 6 c. of salad.
