Asian Style Three Pea Salad
Ingredients
- 2 c. frzn green peas
- 1 c. sugar snap peas (frzn or possibly fresh and blanched)
- 1 c. snow peas (frzn or possibly fresh and blanched)
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. lime juice
- 1 tsp soy sauce
- 1 tsp sugar Salt and pepper to taste
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. vegetable oil
- 2 Tbsp. sesame seeds
Directions
- A few hrs before serving, combine peas in a serving bowl. Chill.
- Whisk together vinegar, lime juice, soy sauce, sugar and salt and pepper.
- Whisk in the oils.
- Toast sesame seeds in a skillet till golden.
- At serving time, toss peas in vinaigrette. Chill till serving. Scatter sesame seeds over top and serve.
