    This is a spicy, hearty salad tastes great in hot or cold weather. It can be an appetizer, Tapas, or served alone as a light meal. We had it paired with Curried Mussels last night. It has only 195 calories per serving. Feel free to substitute Calamari, Octopus, Shrimp, Chicken or Tofu if you don't eat red meat.

    Ingredients

    • 1.5 lb sirloin steak, trimmed of fat
    • 6 tbs lime juice
    • 2 tbs fish sauce
    • 2 tbs low sodium soy sauce
    • 2 tbs sugar
    • 1 tsp chili paste or thai red curry paste
    • 2 cucumber peeled & seeded, quartered lengthwise then sliced thinly
    • 1/2 red onion, thinly sliced
    • 2 cup halved grape tomatoes
    • 4 tablespoons chopped fresh cilantro
    • 4 tablespoons chopped fresh mint
    • 4 scallions (green onion) thinly sliced
    • 4 tbs chopped roasted peanuts

    Directions

    1. Preheat lightly oiled grill to medium-high
    2. Grill steak for 7 minutes per side for medium rare.

      We had this recipe served over rice. The dressing infused the rice and made it a substantial and very tasty meal. We used half Thai Jasmine rice and half short grain brown rice. It was perfect. About 3 cups of rice (precooked) in total.
