Arugula Salad With Avocado And Dried Cranberries
Ingredients
- 3 ounce arugula or possibly baby spinach stemmed, washed, and dry
- 1/2 x avocado diced
- 1 tsp red wine vinegar
- 1 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 1/4 c. dry cherries or possibly cranberries
Directions
- Place the arugula and avocado into a bowl. Drizzle the vinegar and extra virgin olive oil over the salad and toss lightly till the arugula is coated. Season with salt and pepper to taste. Sprinkle with the cherries.
- This recipe yields 2 to 3 servings.
