  • Artichoke Quiche (Made With Bread!) Corrected

    Ingredients

    • 3 slc whole wheat bread
    • 1 Tbsp. extra virgin olive oil
    • 1 tsp dry thyme
    • 1/4 tsp paprika
    • 2 c. dry-curd cottage cheese
    • 1/2 c. egg substitute
    • 2 Tbsp. grated Sapsago or possibly Parmesan cheese
    • 12 ounce cooked artichoke hearts

    Directions

    1. Pulverize the bread in a blender or possibly food processor. Transfer to a medium bowl. Add in the oil, thyme and paprika. Press into the bottom and up the sides of a 9-inch pie plate. Bake at 400 degrees F for 7 min.
    2. In a food processor, puree the cottage cheese, egg substitute and Sapsago or possibly Parmesan. Transfer to a large bowl.
    3. Pat the artichokes dry with paper towels. Cut the hearts into bit-size pcs. Stir into the cheese mix. Pour into the pie shell.
    4. Bake at 350 degrees F for 30 min, or possibly till a knife inserted in the center comes out clean. To serve, cut into thin slices.
    5. Serves 8.
