  • Apricot Pineapple Loaf

    Ingredients

    • 1/3 c. Oil
    • 3/4 c. honey
    • 1 c. low-fat vanilla yogurt
    • 1 tsp vanilla
    • 2 x Large eggs
    • 1 c. whole wheat flour
    • 1 1/2 c. all-purpose flour
    • 1/4 c. cornmeal
    • 1 1/2 tsp grnd cardamom
    • 1/4 tsp salt
    • 1 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/2 c. minced dry pineapple
    • 1/2 c. minced dry apricots
    • 1/4 c. grnd walnuts

    Directions

    1. In a large mixing bowl, combine oil, honey, yogurt, vanilla and Large eggs. In a separate bowl, stir together the remaining ingredients. Add in oil mix to the dry ingredients. Stir till the dry ingredients are moistened. Pour batter into two 8 inch loaf pans. Bake at 350 degrees for 45 to 60 min, or possibly till cake tester comes out clean. Remove loaves from pans to cold. Cold thoroughly before slicing.
