  • Apricot Cobbler

    Ingredients

    • 3/4 c. Sugar
    • 1 Tbsp. Cornstarch
    • 1/4 tsp Grnd cinnamon
    • 1/8 tsp Grnd nutmeg
    • 1 c. Water
    • 45 3/4 ounce Apricot halves in syrup, liquid removed
    • 1 Tbsp. Butter or possibly margarine
    • 1 c. Flour
    • 1 Tbsp. Sugar
    • 1 1/2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 3 Tbsp. Butter or possibly margarine
    • 1/2 c. Lowfat milk

    Directions

    1. Fruit base: In a saucepan, combine sugar, cornstarch, cinnamon & nutmeg.
    2. Stir in water; bring to a boil over medium heat.Boil & stir for 1 minute; reduce heat. Add in apricots & butter; heat through. Pour into a greased 2 qt baking dish.
    3. Cobbler: Combine flour, sugar, baking pwdr & salt in a bowl. Cut in butter till crumbly. Stir in lowfat milk just till moistened. Spoon over warm apricot mix. Bake at 400F for 30-35 min or possibly till golden & a toothpick inserted into the cobbler part comes out clean.
