Apricot Chicken Roll Ups
Ingredients
- 3 Tbsp. Seasoned dry bread crumbs
- 4 x 3-ounce skinless boneless chicken breasts, pounded thin
- 2 tsp Canola oil
- 1/4 c. Apricot spreadable fruit, melted
Directions
- Preheat broiler. Spray broiler pan with nonstick cooking spray.
- Place bread crumbs on large sheet of wax paper. Brush 1 side of each chicken breast with 1/2 tsp. of the oil; place oiled-side down on bread crumbs, pressing firmly to coat.
- Brush uncoated side of each chicken breast with one-fourth of the spreadable fruit. Rol breass to enclose fruit; secure with wooden toothpicks. Place chicken rolls in prepared broiler pan; broil 4" from heat, 6-8 min, till cooked through.
