    Ingredients

    • 3/4 cup butter, softened
    • 1 cup sugar
    • 1 egg
    • 1/2 tsp vanilla
    • 2 cups flour
    • 1/4 tsp baking powder
    • 1 1/3 cups flaked
    • coconut
    • 1/2 cup chopped walnuts
    • 1 jar (10 to 12 oz.) apricot preserves

    Directions

    1. In a large mixing bowl, cream the butter and sugar
    2. Add the egg and the vanilla
    3. Mix well
    4. Combine the flour and baking powder
    5. Gradually add to the creamed mixture
    6. Fold in the coconut and walnuts
    7. Press two-thirds of the dough into a greased 13 x9 inch baking pan
    8. Spread with the preserves
    9. Crumble the remaining dough over the preserves
    10. Bake at 350 F for 30-35 minutes or until golden brown
    11. Cool in the pan on a wire rack
    12. Cut into the bars
