Apricot Bars
Taste Of home - Jill Moritz Down-Home Baking at its Best Ingredients
- 3/4 cup butter, softened
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 2 cups flour
- 1/4 tsp baking powder
- 1 1/3 cups flaked
- coconut
- 1/2 cup chopped walnuts
- 1 jar (10 to 12 oz.) apricot preserves
Directions
- In a large mixing bowl, cream the butter and sugar
- Add the egg and the vanilla
- Mix well
- Combine the flour and baking powder
- Gradually add to the creamed mixture
- Fold in the coconut and walnuts
- Press two-thirds of the dough into a greased 13 x9 inch baking pan
- Spread with the preserves
- Crumble the remaining dough over the preserves
- Bake at 350 F for 30-35 minutes or until golden brown
- Cool in the pan on a wire rack
- Cut into the bars
