  • Apricot And Walnut Scones

    Ingredients

    • 250 gm Self raising flour, (8oz)
    • 1/2 tsp Salt
    • 1/4 tsp Cinnamon
    • 50 gm Solid vegetable oil, (2oz)
    • 125 gm Ready to eat apricots, roughly minced (4oz)
    • 50 gm Walnut pcs, (2oz)
    • 25 gm Soft dark brown sugar, (1oz)
    • 150 ml Soya lowfat milk, ( 1/4 pint)
    • 2 Tbsp. Soya lowfat milk for glazing

    Directions

    1. Preheat the oven to 230 C, 450 F, Gas Mark 8.
    2. Sift the flour, salt and spice into a bowl. Rub in the fat till the mix resembles fine bread crumbs.
    3. Stir in the apricots, walnut pcs and sugar, add in the lowfat milk and mix to a soft dough. Knead gently till smooth.
    4. Roll out the dough on a lightly floured surface to a 1 cm ( 1/2 inch)
    5. thickness and cut out 8-10 rounds with a 6cm (2 1/2 inch) biscuit cutter.
    6. Transfer to a greased baking tray, brush tops with lowfat milk and bake on the middle oven shelf of the preheated oven for 8-10 min till well risen and golden.
    7. NOTES : Delicious quick and easy to make scones, suitable for vegans.
