  • Applesauce Coffee Cake With Crumb Topping

    Ingredients

    • 1/4 c. all-purpose flour
    • 1/4 c. golden sugar - (packed)
    • 3 Tbsp. unsalted butter room temperature
    • 1/2 tsp grnd cinnamon Nonstick vegetable oil spray
    • 1 1/2 c. all-purpose flour
    • 1/4 c. golden sugar - (packed)
    • 2 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 c. unsweetened applesauce
    • 1/3 c. low-fat buttermilk
    • 2 Tbsp. vegetable oil
    • 1 lrg egg yolk
    • 1 tsp vanilla extract
    • 1/2 tsp grated lemon peel - (packed)
    • 2 lrg egg whites

    Directions

    1. Make Topping: Combine all ingredients in small bowl. Mash with fork till blended and coarse crumbs form. Set aside.
    2. Make Cake: Preheat oven to 350 degrees. Spray 9-inch-diameter cake pan with 1 1/2-inch-high sides with vegetable oil spray.
    3. Sift flour, sugar, baking pwdr, baking soda and salt into large bowl. Whisk applesauce, buttermilk, oil, egg yolk, vanilla and lemon peel in medium bowl till well blended. Add in to dry ingredients and stir just till moistened (batter will be thick).
    4. Beat egg whites in another large bowl till stiff peaks form. Whisk half of whites into batter. Mix in remaining whites.
    5. Transfer batter to prepared pan. Sprinkle topping over batter. Bake cake till tester inserted into center comes out clean, about 30 min. Transfer to rack; cold in pan. Cut into 10 wedges and serve.
    6. This recipe yields 10 servings.
