    This cake is big on warm, spicy flavors. It is simple to make and stays moist for days. Homemade applesauce is so easy to make and I think makes the best cake, but of course you can use applesauce from the store. Stay away from sweetened applesauce for this cake. It is sweet enough without added sugars. I make two 8x4 loaf pan cakes and keep one for us and give the other away as a treat or thank-you gift. This cake is best if made one day ahead.

    Ingredients

    • 1 cup margarine or shortening
    • 1 3/4 cups granulated sugar
    • 2 eggs
    • 1 cup white wheat flour
    • 1 1/2 cups unbleached flour
    • 1/2 tsp salt
    • 2 tsp baking soda
    • 2 tsp cinnamon
    • 2 tsp cloves
    • 1 tsp allspice
    • 1/2 tsp nutmeg
    • 2 cups applesauce, warmed
    • 1 cup dried fruit such as currants

    Directions

    1. Preheat oven to 350 degrees. Spray two 8x4 inch loaf pans with nonstick cooking spray. In a mixer cream the margarine until fluffy. Slowly add the sugar, beating until smooth. Add the eggs and mix well. Combine the dry ingredients in a bowl and blend with a whisk to mix thoroughly. Add to the creamed mixture along with the applesauce and dried fruit. Beat on low speed just until blended. Pour batter evenly into the two prepared pans and smooth tops. Transfer pans to the oven and bake for about one hour, or until a toothpick inserted in the middle comes out with moist crumbs but not wet. Cool in pans for 10 minutes, then remove from pans and cook on a rack until completely cool. Wrap in foil and let sit overnight. The loaf will be much easier to slice if you let it sit 24 hours
