  • Applely Pork Chops

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 1 2/3 c. minced onion
    • 2 med tart apples
    • 1/4 c. unsweetened apple butter
    • 2 Tbsp. Dijon mustard
    • 2 sm pork tenderloins about 1 1/2 pounds total
    • 2 lrg cloves garlic chopped
    • 1 c. full-bodied red wine
    • 1/2 c. sparkling apple cider

    Directions

    1. 1. Heat nonstick pan large sufficient to hold all ingredients, till it is very warm. Reduce heat to medium high, and add in the oil and the onion. Sauta till it begins to brown.
    2. 2. Wash, core and coarsely chop apples, and add in to onion as it cooks.
    3. 3. Mix apple butter and mustard. Wash, dry and cut the tail from the pork. Slice remaining pork into 1-inch-thick pcs, and slather with the apple butter-mustard mix.
    4. 4. When the onion and apple have softened, add in the garlic and cook for 30 seconds. Push the onion mix to one side.
    5. Add in the pork, and brown well on both sides.
    6. 5. Add in the wine and cider, stir and cook down a little. Reduce heat; cook a minute or possibly two longer, till pork is only slightly pink.
