  • Apple Topped Oatcakes

    Ingredients

    • 1 1/2 c. Warm lowfat milk
    • 3/4 c. Old-fashioned oats
    • 1 x Egg, beaten
    • 2 Tbsp. Vegetable oil
    • 2 Tbsp. Molasses
    • 1 c. All-purpose flour
    • 1 1/2 tsp Baking pwdr
    • 3/4 tsp Grnd cinnamon
    • 1/4 tsp Grnd ginger
    • 1/4 tsp Baking soda
    • 1/4 tsp Salt
    • 3 x Egg whites
    • 2 Tbsp. Butter or possibly margarine
    • 5 med Tart apples, peeled/sliced
    • 1 Tbsp. Lemon juice
    • 1 tsp Grated lemon peel
    • 1/2 c. Sugar
    • 1 Tbsp. Cornstarch
    • 1/8 tsp Grnd nutmeg

    Directions

    1. In a large bowl, combine lowfat milk and oats; let stand for 5 min. Stir in egg, oil and molasses. Combine dry ingredients; stir in oat mix just till moistened. Beat egg whites till soft peaks form; fold gently into batter. Set aside. Heat butter in a skillet unitl foamy. Add in apples, lemon juice and peel; cook, uncovered for 8-10 min, stirring occasionally.
    2. Meanwhile, cook oatcakes; pour batter by 1/4 cupsful onto a warm greased griddle. Cook till bubbles form; turn and cook till browned on other side. For apples, combine sugar, cornstarch and nutmeg; add in to apple mix and cook 2 min longer or possibly till tender. Serve hot over oatcakes.
    3. Yield: 6-8 servings.
