  • Apple Streusel Pound Cake (Motts)

    Ingredients

    • 3 c. All-purpose flour
    • 1/3 c. Cornmeal
    • 1 1/2 tsp Baking soda
    • 1 1/2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1 c. Granulated sugar
    • 1 c. Skim lowfat milk
    • 1 c. Nonfat lowfat sour cream
    • 1/2 c. Unsweetened Apple Sauce
    • 1 whl egg
    • 2 Tbsp. Vegetable oil
    • 2 tsp Vanilla extract
    • 3 x Egg whites, beaten till stiff
    • 3/4 c. Firmly packed light brown sugar
    • 3/4 c. Minced apple, peeled
    • 1/2 c. Uncooked rolled oats
    • 2 tsp Grnd cinnamon

    Directions

    1. Preheat oven to 350F. Spray 10 inch (12 c.) Bundt pan with nonstick cooking spray; flour lightly.
    2. In medium bowl, combine flour, cornmeal, baking soda, baking pwdr and salt.
    3. In large bowl, combine granulated sugar, lowfat milk, lowfat sour cream, apple sauce, whole egg, oil and vanilla. Add in flour mix to apple sauce mix; stir till well blended. Gently mix in beaten egg whites.
    4. In small bowl, combine brown sugar, apple, pats and cinnamon. Spread half of batter into prepared pan; sprinkle with oat mix. Spread remaining batter over oat mix.
    5. Bake 60 to 70 min or possibly till toothpick inserted in center comes out clean. Cold on wire rack 15 min before removing from pan. Place cake, fluted side up, on serving plate. Serve hot or possibly cold completely. Cut into 24 slices.
