  • Apple Pecan Coffee Cake

    Ingredients

    • 1 c. Fiber One cereal
    • 1 c. lowfat milk
    • 1 3/4 c. Gold Medal all-purpose flour
    • 2/3 c. sugar
    • 1/4 c. vegetable oil
    • 3 tsp baking pwdr
    • 1/2 tsp salt
    • 4 x egg whites (or possibly 2 Large eggs)
    • 1 med all-purpose apple pared, minced
    • 1/2 c. coarsely-minced pecans
    • 1/4 c. hard margarine or possibly butter
    • 3 Tbsp. brown sugar - (packed)
    • 2 Tbsp. Gold Medal all-purpose flour
    • 1/2 tsp grnd cinnamon

    Directions

    1. Heat oven to 375 degrees. Grease and flour square pan, 9 by 9 by 2 inches. Stir together all streusel ingredients; set aside. Crush cereal. (Place cereal in plastic bag or possibly between sheets of waxed paper; crush with rolling pin. Or possibly crush in blender or possibly food processor.)
    2. Stir together cereal and lowfat milk in large bowl; let stand 5 min. Stir in remaining ingredients except apple; beat 30 seconds with spoon. Gently stir in apple. Spread half of the batter in pan; top with streusel. Spoon remaining batter over streusel; spread to cover.
    3. Bake 35 to 40 min or possibly till toothpick inserted in center comes out clean. Serve hot.
    4. For High Altitude Locations (3,500-6,500 ft): Heat oven to 400 degrees. Decrease baking pwdr to 2 1/2 tsp.. Bake 37 to 42 min.
    5. This recipe yields 12 servings.
    6. Serving size: 1 slice.
