  • Apple Kuchen (German Apple Cake)

    This was my Grandmother's recipe. It is also delicious made with pitted sour cherries.

    Ingredients

    • 4 Granny Smith Apples (about 2-1/2 cups) peeled and thinly sliced OR Option: 2 jars Trader Joes Morello Cherries, drained
    • Dough:
    • 1/4 cup unsalted butter, room temperature
    • 3/4 cups granulated sugar
    • 3 large eggs, room temperature
    • 1 tsp. vanilla extract
    • 2 cups all-purpose flour
    • 2 tsp. baking powder
    • 1 to 2 Tbsp. milk
    • Streusel Topping:
    • 1-1/2 cups all-purpose flour
    • 1-1/2 cups granulated sugar
    • 3/4 cups unsalted butter, melted

    Directions

    1. Dough:
    2. In large bowl, cream butter and sugar with electric mixer, until light and fluffy.
    3. Add eggs and vanilla extract and blend well.
    4. In separate bowl, whisk together flour and baking powder.
    5. Blend together flour mixture and butter mixture until smooth.
    6. Add enough milk to make dough spreadable.
    7. Streusel Topping:
    8. Blend flour, sugar, and melted butter with fork.
    9. Preheat oven to 400 degrees
    10. Spread dough in 10"x15" jelly roll pan.
    11. Spread thinly sliced apples or pitted cherries over dough.
    12. Sprinkle small clumps of Streusel Topping over top of dough.
    13. Bake 35 minutes until topping is lightly browned.
    14. Remove pan from oven and cool on rack.
