  • Apple Cranberry Upside Down Cake

    Ingredients

    • 1/2 c. Butter
    • 1 1/4 c. Light brown sugar
    • 4 x Apples
    • 1/2 c. Dry cranberries
    • 8 Tbsp. Butter
    • 1 c. White sugar
    • 2 whl Large eggs
    • 2 c. Sifted cake flour
    • 2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1 tsp Vanilla extract
    • 3/4 c. Buttermilk

    Directions

    1. Preheat oven to 350 degrees.
    2. Peel and core the apples, thinly slice into rings and soaked in lemon juice and water.
    3. In a small saucepan, heat butter and dissolve brown sugar.
    4. Place thin apple rings into bottom of 2 (9-inch) non-stick round cake pans. Sprinkle in dry cranberries. Pour butter and sugar mix over apples and cranberries.
    5. With an electric mixer, cream butter and sugar together. Add in Large eggs, one at a time, and combine well. In a bowl combine sifted flour, baking pwdr and salt. Add in flour mix slowly to egg mix while beating continuously. Combine vanilla and buttermilk. Add in buttermilk mix to batter and beat till just combined.
    6. Pour batter into cake pans over fruit mix. Bake for 25 min or possibly till skewer comes out clean. Let cakes rest in pans on racks to cold. Unmold onto a serving platter.
    7. This recipe yields 2 cakes of 8 to 10 servings.
