Apple Cider Sauce For Duck
Ingredients
- 2 c. apple cider, divided
- 1/2 c. Duck Stock Reduction (recipe follows) Salt and pepper to taste
Directions
- In a medium saucepan, bring 1 1/2 c. of apple cider to a boil.
- Reduce the cider over high heat till it is reduced to 1/4 c., about 10-15 min. Set aside.
- In a small saucepan, bring the stock and remaining 1/2 c. cider to a boil.
- Reduce over medium-high heat till 1/2 c. remains, about 10 min.
- Stir in the reduced cider and cook till the mix is syrupy, about 3-4 min. Remove it from the heat and season with salt and pepper to taste. Set aside and reheat when ready to serve with roasted duck.
