    Apple Cheddar Bread

    Quick bread for breakfast or snacks. Try it toasted.

    Ingredients

    • 2 1/2 C AP flour (can sub some whole wheat flour)
    • 1/4 tsp. salt
    • 1 tsp. baking powder
    • 1 tsp. baking soda
    • 1 C unsalted butter, soft, or just use oil
    • 1 C sugar
    • 2 beaten eggs
    • 1/4 C buttermilk
    • 1tsp. vanilla
    • 1 C grated apples
    • 1 C grated sharp cheddar cheese

    Directions

    1. Preheat oven to 350 and grease and flour a 9" bread pan.
    2. Mix dry ingredients together.
    3. Cream sugar with butter, add wet ingredients and stir well.
    4. Combo wet and dry ingredients, barely incorporate them into a batter.
    5. Spoon into pan and bake 45 minutes.
    6. Begin doing a toothpick test every 5 minutes until it comes out clean.
    7. Let cool on rack at least 20 minutes before removing from pan.
    8. It will taste good warm, but the crumb will be denser, if you wait an hour.
