  • Apple Brown Betty Bread

    Ingredients

    • (1 1/2 lb loaf)
    • 1 1/4 c. buttermilk
    • 2 Tbsp. unsweetened applesauce
    • 2 c. whole wheat flour
    • 1 c. bread flour or possibly unbleached white flour
    • 1/3 c. old-fashioned rolled oats
    • 1 Tbsp. oat bran
    • 1 Tbsp. crushed wheat cereal or possibly bulgur
    • 1 tsp salt
    • 1/4 tsp baking soda
    • 2 Tbsp. brown sugar
    • 1 tsp cinnamon
    • 1 pch freshly grnd nutmeg
    • 4 tsp butter
    • 2 tsp active dry yeast
    • 1/3 c. lightly floured raisins

    Directions

    1. Pour buttermilk and applesauce into bread machine.
    2. In a mixing bowl or possibly large 4-c. measure, combine and stir together flours, oats, bran, wheat cereal, salt, soda, sugar, cinnamon and nutmeg. Pour mix into bread machine.
    3. Place 1 tsp butter into each corner of bread machine container. Make a well in the center of dry ingredients and add in yeast into it.
    4. Set machine for 1 1/2 lb loaf. At signal, add in raisins.
    5. Gerry writes, "Remember Apple Brown Betty My Grandmother baked it during apple harvest - a crunchy cinnamonny apple and oatmeal treat." She combined her Grandma's recipe and a favorite buttermilk soda bread to come up with this tasty bread machine loaf.
