    Yummy:) add whatever you have on hand, and healthier than waffle house!I do love waffle house thoughand im proud to admit it!

    Ingredients

    • 2 potatoes (white or gold)
    • 1/4 onion (yellow)
    • 1 cup spinach (fresh -baby)
    • 1/4 cup cilantro (then chop)
    • 1/4 cup tomatoe (grape-sliced in half)
    • 1 clove garlic
    • 1 tbsp cumin seeds
    • 1 tsp cayenne pepper
    • 1/4 tsp sea salt
    • 1/4 tsp green tabasco

    Directions

    1. Grate the potatoes using mandolin or box grater
    2. Press the potatoes into strainer to drain the water from them,pat dry
    3. Spread hashbrowns out flat in pan and saute in olive oil until you get them crispy.
    4. Add all other ingredients to top of hashbrowns and flip once for an minute or two only so you can retain the nutrients in the veggies, yet unlock them.
