    Ingredients

    • 1 c. Pearl barley Cool water
    • 1 sm Piece cinnamon bark
    • 1 c. Granulated sugar Grnd cinnamon Blanched almonds Blanched hazelnuts Minced walnuts Sultanas (white raisins) Rose water (optional)

    Directions

    1. Serves: 8-10
    2. Cooking Time: 2-1/2 hrs
    3. Wash barley well, place in a bowl and cover with 4 c. cool water. Soak overnight.
    4. Next day put barley, soaking water and cinnamon bark into a heavy pan and bring to the boil. Boil gently, uncovered, till barley is very soft and porridge-like in consistency - about 2 hrs. Remove cinnamon bark.
    5. Stir in sugar and cook for further 10 min. Turn into individual bowls and sprinkle with grnd cinnamon. Decorate with nuts and sultanas.
    6. Serve hot or possibly chilled with additional nuts and sultanas, and rose water for adding to individual taste if you like.
