  • Another Apple Crisp

    Ingredients

    • Topping
    • 1/2 cup flour
    • 1/2 cup old fashioned oats
    • 1/2 cup packed brown sugar
    • 1/2 tsp baking powder
    • 1/4 tsp ground cinnamon
    • 1/4 tsp salt
    • 1/3 cup cold butter, diced into small cubes
    • Apple filling
    • 2 lbs apples peeled, cored and sliced thin. About 7 apples
    • 3 TBSP butter, melted
    • 2 TBSP flour
    • 3 TBSP water or apple cider
    • 1 TBSP lemon juice
    • 1/2 tsp vanilla extract
    • 1/4 cup light-brown sugar
    • 1/2 tsp ground cinnamon
    • 1 pinch salt

    Directions

    1. Preheat oven to 375 degrees.
    2. Spray an 8 x 8 inch baking dish with cooking spray. Set aside.
    3. In the bowl of a stand mixer, mix together flour, oats, brown sugar, baking powder, cinnamon and salt.
    4. Add diced butter into dry mixture until it comes together into small crumbles.
    5. Transfer to refrigerator to chill while preparing filling.
    6. In a small pot, melt butter and add flour until well blended, then mix in cider or water, lemon juice and vanilla.
    7. Stir in brown sugar, cinnamon, and pinch of salt
    8. Add apples to a large bowl and toss with sauce to evenly coat.
    9. Then pour apple mixture into prepared baking dish and spread into an even layer.
    10. Sprinkle topping in crumbles evenly over top of apples.
    11. Bake until top is golden brown and apples are tender when pierced with a toothpick, about 45 minutes.
    12. Remove from oven and allow to rest 10 minutes before serving. Serve warm with vanilla ice cream and salted caramel sauce, if desired.
