    • 1/4 c. pickling salt
    • 4 c. water
    • 8 c. sugar
    • 4 c. cider vinegar
    • 2 Tbsp. whole cloves
    • 5 x cinnamon, sticks
    • 2 Tbsp. whole allspice

    2. Cover watermelon in a large pot with fresh cool water. Simmer about 7 min till rind is almost tender. Drain thoroughly.
    3. Combine sugar and vinegar in a large pot. Tie spices in a cheesecloth and add in to the pot. Bring to a boil and simmer, uncovered, for 5 min. Add in liquid removed watermelon rind to brine. Seal immediately.
