Annie Mae Jones' Sponge Cake For Strawberry Shortcake
Ingredients
- 4 x Large eggs,at room temperature
- 1 c. Sugar
- 1 tsp Vanilla
- 1 1/2 c. Cake flour
- 3 tsp Baking pwdr
- 3/4 c. Lowfat milk
Directions
- 1. Preheat oven to 325'F.
- 2. Separate Large eggs, placing yolks in large mixing bowl and setting whites aside. Beat yolks with sugar till very light and fluffy. Beat in vanilla.
- 3. Sift cake flour with baking pwdr onto waxed paper.
- 4. Fold dry ingredients alternately with lowfat milk into egg-sugar mix.
- 5. In a separate bowl beat reserved egg whites till stiff and then fold into batter.
- 6. Pour into an ungreased 9" tube pan and bake in preheated oven 45-50 min . Invert pan. When cake is cold remove from pan.
