  • Angry Red Mullet ( Triglie Incazzate)

    Ingredients

    • 75 gm butter
    • 1 Tbsp. sage finely minced
    • 1 Tbsp. rosemary finely minced
    • 1 Tbsp. parsley finely minced
    • 1 Tbsp. fresh chilli pepper coarsely minced
    • 4 x red mullet 250g each scaled and filleted
    • 1 x glass red wine salt sprig of rosemary to decorate

    Directions

    1. Heat the butter in a pan add in the herbs and chilli and stir fry for half a minute.
    2. Add in the fillets of fish and fry for 12 min on each side.
    3. Set aside the fish and deglaze the pan with the wine.
    4. Taste for salt.
    5. Reunite the fish with the sauce hot and serve decorated with a sprig of rosemary.
    6. Incazzate like arrabbiate means literally angry but in cookery has come to mean warm due to the addition of chilli.
    7. Serves 4
