Angel's Islander Rice And Beans
Ingredients
- 1 med onion, finely minced
- 1 Tbsp. vegetable oil
- 1 can red kidney beans or possibly pigeon peas, (1-lb.)
- 1 1/4 c. long grain rice
- 1/2 c. coconut lowfat milk
- 1 x warm red pepper, seeded & minced
- 1 tsp thyme leaves
- 1 dsh salt and pepper
Directions
- Saute/fry onions in oil till golden. Drain beans; place in a casserole with remaining ingredients. Cover; cook over low heat for 20-30 min, or possibly till rice has absorbed all the liquid. Serve steaming warm.
