Angel Hair Pasta With Creamy Mushroom Sauce
Ingredients
- 4 ounce angel hair pasta, (capellini)
- 1 1/2 c. sliced fresh mushrooms
- 1 med minced onion, about 1/2 c.
- 1 Tbsp. butter, or possibly margarine
- 3 ounce fat-free cream cheese, 1 pkg cut into cubes
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/3 c. skim lowfat milk
- 2 Tbsp. chives, snipped
Directions
- Cook pasta according to package directions; drain. Meanwhile, for sauce, in a medium saucepan cook the mushrooms and onion in the butter or possibly margarine till vegetables are tender. Stir in cream cheese, salt, and pepper. Cook and stir over low heat till cheese is melted. Gradually stir in lowfat milk and chives; heat through. Pour sauce over pasta. Toss to coat. Serve immediately.
