    Ingredients

    • 12ozs Oil
    • 4lbs Onion, Spanish Peel, Dice fine
    • 2lbs Peppers, Green Wash, seed, dice
    • 1/2cup Garlic, Fresh Peel, mince
    • 6lbs Ground Beef
    • 1Gal Marinara Sauce
    • Salt To Taste
    • 1tsp Pepper, Black
    • 6lbs Elbow Macaroni
    • Cheese, Parmesan Fresh, Grated as needed

    Directions

    1. In a stock pot, place the macaroni in boiling salted water
    2. Cook until al dente
    3. Shock under cold running water, drain, and set aside
    4. Heat oil in a large saucepan
    5. Add the onions, and saute until they are translucent
    6. Add the green peppers and garlic
    7. In a separate pan, brown the ground beef
    8. Drain the excess fat, combine with the vegetables, and add the tomato sauce
    9. Bring to a boil, then simmer for 20 minutes
    10. Adjust the seasonings
    11. Mix the meat sauce with the cooked pasta, place in lightly oiled hotel pans, and cover with foil
    12. Bake in a 350 F oven for 10-15 minutes or until hot
    13. Top with Parmesan cheese, and serve
