    Ingredients

    • 1 3/4 c. All-purpose flour
    • 1 1/4 c. Cocoa pwdr
    • 2 tsp Baking soda
    • 1/4 tsp Salt
    • 1 1/4 c. Unsalted butter
    • 1 1/4 c. Sugar
    • 3/4 c. Dark brown sugar
    • 2 x Large eggs
    • 1/4 tsp Vanilla
    • 12 ounce Minced bittersweet chocolate
    • 1 c. Minced pecans
    • 1/2 c. Dry cherries
    • 1 quart Vanilla ice cream

    Directions

    1. Directions: In a small bowl, combine the flour, cocoa pwdr, baking soda and salt. In a large bowl, with an electric mixer combine the butter, sugar and brown sugar. When well combine, add in the Large eggs one at a time, mixing well after each addition. Blend in the vanilla. Begin adding the dry ingredients 1/2 c. at a time, mixing well till completely incorporated. Mix in the bittersweet chocolate, pecans and cherries. Using a small ice cream scoop, place balls of dough onto a parchment paper lined cookie sheet. Bake at 350 degrees for about 8-10 min till puffed and cracked. Allow cookies to cold and place a scoop of ice cream on one cookie and top with a second cookie.
