Amatriciana
I absolutely love amatriciana. It's like spaghetti bolognaise on steroids. It's traditionally served over bucatini which I, for the life of me, have yet to find at the store. I usually just serve it over spaghetti or fettuccine, but you could use whatever you want. Ingredients
- 1 onion, minced
- 5 strips bacon (I use bacon because pancetta is expensive, but it's traditionally made with pancetta)
- 1 can crushed tomatoes, the small can
- 1/2 tsp red chili flake
- salt and pepper
- pasta for serving
Directions
- Cut the bacon in chunks and cook in a skillet.
- Once it's almost crispy, add the onion and cook until translucent.
- Add the tomatoes and chili flake.
- Season with salt and pepper to taste.
- Simmer for 20 minutes while you cook the pasta.
- Serve over pasta.
