    Delicious, gluten-free crackers with sunflower seeds.

    Ingredients

    • 4 Tbs. cool water
    • 1/4 tsp. unbuffered, corn-free vitamin C crystals
    • 1/2 cup pumpkin, sunflower or sesame seeds, divided
    • 3/4 cup Amaranth flour
    • 1/2 cup Arrowroot starch
    • 1/4 tsp. salt
    • 3 Tbs. olive or other oil
    • 2 Tbs. boiling water
    • l Tsp. baking soda
    • Bake at 350 degrees.
    • OPTIONAL ADDITIONS:
    • 1 Tsp. of any one of the following: chili powder, dried oregano, basil, dill weed, ground anise, fennel, cumin or caraway seeds.

    Directions

    1. Combine cool water and vitamin C crystals. Stir, set aside to dissolve. Grind 1/4 cup of seeds of choice until size of sesame seeds, set aside. Grind other 1/4 cup of seeds into fine meal. Combine with four, starch and salt. Whisk dry ingredients together well. Drizzle oil over flour mixture and stir. When large clumps form, use a table knife in each hand to cut through clumps until size of small peas. With a fork, stir in liquid with dissolved vitamin C crystals. Combine boiling water and baking soda; stir to dissolve. Pour onto dough and stir in. Turn dough onto non-stick cookie sheet. With hand and fingers, spread dough out to edges of sheet. Put ground seeds on top of dough and press in. Score dough into 2" squares and prick with a fork. Bake 22 min.
    2. These crackers freeze well.
