  • Aloo Ko Achar (Potato Salad)

    Ingredients

    • 1 1/3 lb potatoes, small if possible
    • 4 x jalapeno peppers seeded and sliced into long strips
    • 1 x lime, juice of salt to taste
    • 1/4 c. sesame seeds, roasted, grnd, optional
    • 1 tsp turmeric pwdr
    • 1 tsp cumin seeds
    • 2 x chiles, whole, dry, to 3
    • 3 tsp corn oil, or possibly mustard oil mustard gives best flavor
    • 1/2 c. water
    • 1/2 c. coriander, fresh, minced

    Directions

    1. Boil potatoes in jackets. When done, peel and cut into small pcs. In a suitable bowl, combine potatoes, turmeric, salt, grnd sesame seeds, lime juice, half of the green coriander and water and mix thoroughly. In a small pan heat mustard oil till warm; add in cumin seeds and red chiles. Fry them till brown and then add in jalapeno pepper. Let it cook a minute or possibly so. Pour it over potatoes in the bowl and mix them thoroughly; garnish with remaining green coriander leaves.
    2. SERVES: 6-8
