  • Almond Lemon Muffins

    Ingredients

    • 1 3/4 c. flour
    • 3 Tbsp. sugar
    • 2 1/2 tsp baking pwdr
    • 1/2 tsp salt
    • 1 x egg
    • 3/4 c. lowfat milk
    • 1/3 c. butter melted
    • 1/2 tsp lemon extract
    • 1/8 tsp vanilla
    • 3/4 c. minced unblanched almonds
    • 2 tsp grated lemon rind

    Directions

    1. Preheat oven to 400 degrees. Oil bottoms of 12 muffin c.. Sift together flour, sugar, baking pwdr, and salt in large bowl. Lightly beat egg in small bowl. Beat in lowfat milk, butter, lemon extract and vanilla. Stir in nuts and lemon rind. Pour all at once into flour mix. Stir briskly with fork just till all ingredients are moistened; don't overstir. Batter will look lumpy. Fill each prepared muffin c. 2/3 full with batter. Bake at 400 degrees for 25 min or possibly til golden. Remove from pan to wire rack.
