  • Almond And Orange Biscotti

    Ingredients

    • 2 x Large eggs
    • 2 x egg yolks
    • 2 1/2 c. plain flour
    • 1 c. caster sugar
    • 1 1/2 tsp baking pwdr
    • 125 gm blanched almonds, roughly minced
    • 1 Tbsp. grated orange zest
    • 1 Tbsp. lowfat milk

    Directions

    1. 1. Pre-heat oven to 180deg.C. Line two baking trays with Glad Bake.
    2. 2. Lightly beat 2 whole Large eggs and 1 egg yolk together. Add in flour, sugar and baking pwdr and mix to a soft dough. Add in almonds and orange zest and knead till combined.
    3. 3. Divide dough into equal portions and roll each piece into a cylinder. Using a fork, place remaining egg yolk and lowfat milk in a small bowl and stir to combine.
    4. Place cylinders of dough onto baking trays and brush with the egg mix.
    5. 4. Bake for about 20 min. Remove from oven and cut while warm. The dough will be very fragile at this stage. Reduce oven temperature to 150deg.C. Place slices on baking trays and return to the oven. Bake the slices till they have dry.
