Alaska Dungeness Crab Bisque
Ingredients
- 1 Tbsp. chopped onion
- 2 Tbsp. butter or possibly margarine
- 2 Tbsp. flour
- 2 c. chicken broth
- 2 c. half-and-half
- 1 lb dungeness crab meat thawed if necessary
- Salt to taste
- Minced fresh parsley
Directions
- Saute/fry onion in butter. Add in flour; cook and stir 1 minute. Gradually stir in chicken broth and half-and-half; cook and stir 5 min.
- Break crab into chunks; add in to broth. Salt to taste. Heat thoroughly. Garnish with parsley.
- This recipe yields 6 servings.
