  • Afternoon Tea: Hot Griddled Christmas Scones

    Ingredients

    • 225 gm Self-raising flour
    • 50 gm Butter
    • 1 pch salt
    • 50 gm Caster sugar
    • 50 gm Sultanas finely minced, (50 to 75)
    • 1 x Egg, beaten with a little lowfat milk
    • 25 gm Finely minced red and green
    • Glace cherries
    • 1 pch cinnamon

    Directions

    1. 1 Sift the flour and salt in a bowl and rub the butter in to make a fine crumb. Stir in the sugar, fruit and cinnamon. Add in the egg and lowfat milk and mix to a soft dough.
    2. 2 Turn out onto a floured board and dust with flour. Roll out to 1/2" thickness and cut into 8-10 rounds with a pastry cutter. Add in some butter to a griddle pan and fry the scones in two batches for five min, turning once.
