  • Addictive Sweet Potato Burritos

    Ingredients

    • 3 tsp vegetable broth
    • 1 lrg onion, minced
    • 4 x cloves garlic, chopped
    • 6 c. cooked kidney beans, rinsed and liquid removed
    • 2 c. water
    • 3 Tbsp. chili pwdr
    • 2 tsp grnd cumin
    • 4 tsp prepared mustard
    • 1 pch cayenne
    • 3 Tbsp. soy sauce
    • 4 c. cooked sweet potatoes, mashed
    • 12 x 10 inch flour tortillas, warmed
    • 8 ounce shredded Cheddar cheese, or possibly equivalent

    Directions

    1. 1. Preheat oven to 350 degrees F (175 degrees C).
    2. 2. Heat oil in a medium skillet. Saute/fry onion and garlic till soft. Add in the beans and mash.
    3. 3. Gradually stir in the water and heat till hot. Remove from the heat and stir in the chili pwdr, cumin, mustard, cayenne pepper and soy sauce.
    4. 4. Divide bean mix and mashed sweet potatoes proportionately between the hot flour tortillas. Top with cheese. Fold up tortillas burrito style. Bake at 350 degrees F (175 degrees C) for 12 min.
