Absolut Vodka Cured Salmon With Blood Orange Juice And Li
Ingredients
- 16 x Thin slices raw salmon
- 2 x Shallots, finely minced
- 1 x Leek, finely minced into 3mm pcs
- 2 Tbsp. Absolut Vodka
- 1 x Ripe blood orange, juice of
- 1 tsp Sea salt Freshly milled black pepper Few sprigs mizuno leaves or possibly rocket
- 1 x Lime to finish, juice of
Directions
- Lay out the thin slices of salmon on plates, 4 per plate. Sprinkle each plate proportionately with the shallot and leek.
- Mix together the vodka and orange juice, divide into 4 equal portions and trickle 1 portion on to each plate to cover the salmon.
- Just before serving, sprinkle lightly with sea salt and freshly grnd black pepper and the lime juice. Garnish with mizuno leaves or possibly rocket and serve immediately.
