7 Up Bundt Cake

- 1 1/2 C soft butter
- 3 C sugar
- 5 eggs
- 2 T lemon or lime zest
- 1 tsp. vanilla
- juice one lemon or lime
- 3 C unbleached all purpose flour (bleached is ok)
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 C 7 Up
- glaze:
- 2 C powdered sugar, sifted
- 2 tsp. lemon or lime zest
- 2 T lemon or lime juice
Directions
- Heat oven to 350
- Prep a bundt pan with oil and flour.
- Cream butter and sugar for several minutes with a hand or stand mixer.
- Add eggs one at a time.
- Add vanilla, zest, lime or lemon juice, and 7 Up.
- Sift the flour with baking powder and salt, stir into wet mixture.
- Stir just enough to combine the ingredients, pour into the bundt pan.
- Bake 1 hour and begin checking for doneness (clean toothpick).
- When done, let cool on a rack for a half hour or more and place on a plate.
- Mix the sifted confectioner's sugar with the zest and juice, and drizzle over cooled cake.
