    7 Up Bundt Cake

    Use 7 Up or any other lemon lime soda.

    Ingredients

    • 1 1/2 C soft butter
    • 3 C sugar
    • 5 eggs
    • 2 T lemon or lime zest
    • 1 tsp. vanilla
    • juice one lemon or lime
    • 3 C unbleached all purpose flour (bleached is ok)
    • 1 tsp. baking powder
    • 1/2 tsp. salt
    • 1 C 7 Up
    • glaze:
    • 2 C powdered sugar, sifted
    • 2 tsp. lemon or lime zest
    • 2 T lemon or lime juice

    Directions

    1. Heat oven to 350
    2. Prep a bundt pan with oil and flour.
    3. Cream butter and sugar for several minutes with a hand or stand mixer.
    4. Add eggs one at a time.
    5. Add vanilla, zest, lime or lemon juice, and 7 Up.
    6. Sift the flour with baking powder and salt, stir into wet mixture.
    7. Stir just enough to combine the ingredients, pour into the bundt pan.
    8. Bake 1 hour and begin checking for doneness (clean toothpick).
    9. When done, let cool on a rack for a half hour or more and place on a plate.
    10. Mix the sifted confectioner's sugar with the zest and juice, and drizzle over cooled cake.
