20 minute Skillet Baked Eggplant Parmesan
Delicious Italian Dish-so easy and so tasty! Ingredients
- One eggplant (sliced)
- 20 ounces homemade chunky Tomato Sauce (or any of your choice)
- 1 cup Grated Parmesan Cheese
- 1/2 Cup Grated Mozzarella
- Garnish Fresh Basil Leaves
Directions
- Pre Heat Oven 400 F
- Slice Eggplant (in 1/4" slices) add to a skillet, it is ok if they overlap
- Add mozzarella cheese, add tomato sauce, add parmesan and place into the hot oven for 20 minutes
- Garnish with fresh Basil
