100% Bran Muffins
Ingredients
- 5 c. Flour
- 5 c. Post(r) 100% Bran Cereal
- 2 c. Brown Sugar
- 1 c. Dates, Minced
- 1 Tbsp. Baking Soda
- 1 Tbsp. Cinnamon
- 4 c. Buttermilk Or possibly Sour Lowfat milk*
- 1 c. Vegetable Oil
- 4 x Large eggs
Directions
- * To sour lowfat milk, add in 3 Tbsp. of vinegar to the lowfat milk.
- 1. In a large bowl mix all dry ingredients.
- 2. Mix all other ingredients till well blended.
- 3. Add in to dry mix and stir till blended.
- 4. Place in well greased muffin tins.
- 5. Bake at 375 F for 25 to 30 min or possibly till muffins are golden brown.
