Zucchini with sunflower seeds

Ingredients

  • 2 medium zucchini
  • 3 tbs olive oil
  • 3 tbs sunflower seeds, without husks
  • 80 g butter
  • 1 clove garlic, pressed
  • ½ lemon, grated rind and juice
  • ½ tbs sugar
  • ½ tsp sea salt

Directions

1. Wash zucchini, remove the stem and cut lengthwise in ½ cm thick slices.
2. Fry the slices in olive oil, in batches, on both sides until light brown. Slices should stay al dente. Place on a paper towel to remove the excess oil and keep warm.
3. Lightly toast sunflower seeds in a pan without oil; set aside to cool.
4. Sauté garlic in hot butter for a very brief time.
5. Add toasted sunflower seeds, lemon juice and zest, sugar and salt to the butter and garlic. Simmer the sauce, stirring constantly, for 3-4 minutes.
6. Pour the sauce over fried zucchini slices and serve immediately.
