Whole Wheat Spicy Banana Bread

Ingredients

  • 1/2 c. butter
  • 1 c. sugar
  • 2 Large eggs, lightly beaten
  • 1 c. mashed ripe bananas (about 3)
  • 1 c. all-purpose flour, unsifted
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 c. whole wheat flour, unsifted
  • 1/3 c. warm water
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 3/4 c. minced walnuts

Directions

  1. Heat butter and blend in sugar. Fold in beaten Large eggs and mashed banana, blending till smooth. In a bowl, stir together all-purpose flour, salt, soda and whole wheat flour till thoroughly blended. Add in dry ingredients alternately with warm water. Stir in minced nuts and spices. Spoon batter into a greased 9x5 inch loaf pan.
  2. Bake in a 325 degree oven for about 1 hour and 10 min, till bread begins to pull away from sides of pan and a wooden skewer inserted in center comes out clean. Let cold in pan for 10 min; then turn out onto a rack to cold completely.
  3. Makes 1 loaf.
