Vegan Carrot Cake Cupcake for ONE

Been a bit obsessed with single serving desserts lately. This one I think about DAILY. It is not overly sweet, and I feel almost less guilty because there are carrots in it. Score! It doesn't even need frosting.

Ingredients

  • 2 tbsp flour
  • 1tbsp + 1 tsp coconut palm sugar
  • 1 pinch baking powder
  • 1 pinch baking soda
  • 1/4 tsp cinnamon
  • 1 pinch salt
  • 1 tbsp unsweetened apple sauce
  • 1 tbsp unsweetened vanilla almond milk
  • 2 drops vanilla extract
  • 1 tbsp shredded carrots
  • 1 tsp raisins (for the top)

Directions

  1. Preheat oven to 350 degrees.
  2. Line a cupcake pan with 1 cupcake liner or grease one cupcake space.
  3. Add all ingredients together into a small bowl (except raisins)--easiest thing to do is whisk it all with a fork.
  4. Add raisins on top.
  5. Bake for 10 minutes or until a toothpick comes out clean.
